My Go-To Meal That Satisfies the Pickiest of Eaters

Do you ever have one of those days where you just want to carbo-load, (hello, PMS) need something quick, and something that will satisfy ALL of those picky eaters in your house (ahem, husbands, I’m talking to you)?! Well, you are in luck because I have the easiest dish for you. Sorry, it’s not dairy or grain free, but can totally be made gluten free (how I make it).
Ingredients
My family calls it, “Corn Pasta” because you guessed it - it’s pasta full of corn. 🤣 Also, don’t worry, I’m not the kind of blogger that’s going to do a deep dive into the history of corn or pasta before getting to recipe:
To make 3-4 servings you’ll need the following:
You need a can of corn but keep 1/3 cup set aside
1/3 cup of avocado oil
1/3 cup Italian cheese blend (Make sure it has Asiago cheese blended up in there)
1/2 - 3/4 box of fettuccine noodles (I get the brown rice kind by Jovial and nobody can tell it’s gluten free!)
Eckrich sausage chopped up into small pieces (if you need gluten free, make sure it’s labeled GF, typically by the list of ingredients)
1/3 cup of chopped almonds.
You can totally sub the sausage with chicken, get creative and add mushrooms, tomatoes, etc. Also, a good side salad never hurt anyone.
Instructions
1. Start by getting your water set up to boil - the noodles take the longest in this dinner. Once the water is ready, boil that your fettuccine noodles by following the instructions on the box - I typically boil the Jovial noodles for 1-2 minutes less than the instructions say… (I typically use 1/2 - 3/4 of the Jovial box which is probably more servings than my little family of 3 requires, however, we eat it up because it’s delicious…so use your judgment on noodle servings)
2. Lightly oil your skillet and start cooking your corn and sausage in a skillet, but make sure to reserve 1/3 cup of corn and set aside for the sauce.
3. While everything is cooking, you are going to create your sauce. Combine the following in a blender: 1/3 c corn, 1/3 c cheese blend, 1/3 c avocado oil, and 1/3 c almonds. Blend until smooth.
4. Once the noodles are done, add to the corn and sausage skillet, pour over your sauce. If your sauce is a little thick, you can add a few tablespoons of water to help mix it all up.
5. If you’re extra fancy, you can top it with tomatoes or parsley, but not needed or necessary, just whatever you feel like. Throw in a side salad and some fruit if that is your thing.
6. You’re done. Eat it up. There will be no left leftovers!
